FWIW Belgian Blonde/Saison

13 gallons, OG 1.052, 26 IBU
13# pilsner malt
13# Vienna malt
Mash at 149 for 1 hour
Bittering EKG/Styrian Goldings 17 IBU
1 oz EKG 50 min
1 oz Styrian Goldings 30 min
1 oz Saaz 10 min
1 oz Saaz 0 min
Ferment 5 gallons with Abbey II 1762 (Blonde), Ferment 8 gallons with French Saison 3711 (Saison), both at 70 to 75 F.
May add some Brett to either at some point.

Dang, both of these are about finished with primary at 69-72 F. I'm thinking toasted, free-range, homegrown oak for some of the saison.

Maybe it's just me, but I wouldn't want that oak/vanilla character anywhere near any saison that I ever brew. Especially one with French Saison.
