Calypso Hop Investigation

Brewed this last Sat night.  Never used Calypso before, but the pellets smelled quite pleasant without being citrusy.

12 lbs. Golden Promise
1.5 lbs. Golden Naked Oats
.5 lbs. Victory
.25 lbs. Acidulated Malt
.5 lbs. Table Sugar (last 10 mins of boil)

Single infusion mash at 152F for 1 hour

1 oz. Calypso FWH for a 1 hour boil
1 oz. Calypso 10 min
2 oz. Calypso 40 min steep after flameout

Cool and pitch 1 cup US-05 slurry from the previous batch.
Ferment in the 66-68F range
OG: 1.064

Plan to dry hop with 2 oz Calypso once fermentation finishes.

Transferred this to secondary on Sat night.(FG 1.015)  Calypso is an interesting beast and the bitterness profile reminds me a lot of Chinook with a strong citrus(grapefruit?) twang that lasts through the finish.  The flavor is more fruity and I guess you could say apple-ey or pear-ey like the description claims.  There was very little aroma, so I'll dry hop it in the next few days and let it sit for a week.  The big hop flavors worked well with the malt bill for a unique testing IPA so I have high hopes for the finished product.  I think this hop would work really well blended with another hop or two in a big American barleywine.

Bottled this last night after about 9 days worth of dry hopping.  There is a big fruity flavor component up front that leads to a sharp bitter burn that lasts through the finish.  Back before I knew much about brewing I made a big extract barleywine with a bunch of Galena hops.  It was far from stellar, but as far as I recall, the fruitiness I remember from that beer is very much the same as what I wound up with in this beer.  I haven't used Galena since then so I'm not 100% certain.  I also just found this on the Stone blog:

Calypso is an American hop derived from Nugget and USDA 19058m

I bought a pound of Nugget from hopsdirect as well so maybe I'll make this same beer with those to see how they compare.

Please post your thoughts on Calypso if you've also used them in a batch.

Forgot to update about this, but the Calypso APA turned out pretty well. I got some light citrus from Calypso, but mostly melon. Cantaloupe, almost. Made another single-hop APA with Legacy, and got berries and blackcurrant. These two APAs blend well at the tap. Next APA in the batting order is Comet.

Well . . . it wasn't quite July, but I brewed this DIPA yesterday.

10 lbs Maris Otter
4 lbs Oats

Single infusion mash at 148F for 1 hour

2 lbs white sugar added to first runnings and reduced by 3/4ths and added to the fermenter

1.2 oz. Magnum at first boil of a 1 hour boil

9 oz. each Calypso and Legacy at 180F

Cool and pitch US05

Two 1-week dry hopping sessions with 1.5 oz each Calypso and Legacy each session


Already fermenting away as of this morning. Definitely got melon from the Calypso. Not sure about what I got from the Legacy. Whatever it was, it seemed more herbal than the Calypso.

I'll get back to you guys in two or three weeks with additional details.

Racked this beer for its second week of dry hopping on Saturday. Took a gravity reading and it is holding steady at 1.008 and it tasted quite good. If I didn't know better I would have guessed that it was Cascade and Amarillo. Gonna do a 100% Brett IPA with the rest of the Calypso and Legacy that I have left. Should be a fun project.
