FWIW Munich Dunkel

Brewed today
12 gallons, OG 1.058, Mash temp 152 F, 27 IBU
15 lb Munich Malt
10 lb Vienna Malt
1 lb CaraAroma
1 lb Special B
1/4 lb Carafa I
1 oz German Norther Brewer (9.4 AA), 60 min
1 oz German Perle, AA 8.3, 50 min
1 oz German Halletauer, 15 min
1 oz German Halletauer, 5 min
Wyeast 2206, ferment at ambient 50 to 55 F

Not this past weekend, but I'll be brewing a DIPA this coming Sunday.

Yeah, it was an off weekend for me too. Did a Centennial IPA the weekend before. Prepping for an Impy Stout next. The Dunkel sounds good KB.

The CaraAroma and Special B struck me as kinda weird. Even though they are only about 7% of the grist.

Any thoughts on why you used those two KB?

Weird?
CaraAroma....red tints, intense maltiness, compliments Munich malt well. Special B...chocolate and raisin notes (bock-like) without the harshness of roasted malt.

Thought you would have used melanoidin instead of the CaraAroma. Maybe even Aromatic. The Special B just seemed completely out of place.

Was simply curious about your thought process on using them. Like I said, they comprise a pretty small proportion of the grist, so we aren't talking about those two crystal-type malts making a massive contribution anyway.

Yup, a winner. 6 weeks of lagering so far. Time to start thinking about bottling/kegging. Maybe 5 gallons as a kellerbier dunkel.
