We'll have to have a cookie bake-off. And combine that with a beer tasting. ;) Have you made any cookies with beer as an ingredient, or malt extract syrup? I bought a bottle of the syrup awhile back, but haven't tried it yet, still trying to use up some honey.

The barley syrup you'd purchase at WF is not made from malted barley from what I remember. Different than DME or ME.

Malta Goya might be a good sub for his soy milk, since I cannot see anything interacting with the milk other than baking powder and you could do the same thing with water. The milk might add some "milk" flavor to the recipe, but the malta goya should react with the baking powder and create some leavening of the cookies and give a malt flavor, of course then you should leave out the honey since that stuff is pretty darn sweet...

Maybe this is a different product than what you're thinking of. The bottle says "INGREDIENT: ORGANIC SPROUTED BARLEY" and some other description. Here's a link:

I just haven't opened it, cuz once you do it needs to go into the fridge, and my fridge is always packed...
I guess an alternative would have been to get some extra LME from a brew supply place. Could use DME, though it tends to be difficult to deal with in small quantities, ie, when you're not just dumping a whole bag into a big pot. Anyway, don't remember what this cost (probably a few dollars), but this tidy little jar is 20 oz. weight, so comparable to LME from a brew shop.
