This recipe has no refined sugar*, no oil*, no eggs.  Very yummy, hardy, healthy cookies!  If anyone is interested, I'll post a recipe.

* some honey (could use malt extract...), oil to lube pan only.

If it's anything near as good as Weaver Streets Vegan health bars, I'd like to see it :).

I like Weaver St. Mkt. stuff, but I haven't had their health bars, so can't make a comparison.  But I'm guessing the oatmeal cookies are better.   :D

Here's the recipe as I recorded it awhile back.  The formatting will probably come out pretty badly.  I guess these are vegan, except for the honey.  Convert that to barley malt syrup, and you'll be all set.  Adding a chopped up ripe banana is also good in this.

----------------------------------------------------------------------------------------------------

Ingredients:
-----------

Quick oats, unsweatened soy milk (or moo milk), honey,
raisins and/or currants, walnuts, ground cinnamon,
vanilla extract, salt, baking powder

Method:
------

Preheat oven to 325F.

In a large mixing bowl, combine oats, fruit, nuts,
cinnamon, salt, baking powder.

In a smaller bowl or large measuring cup, combine milk,
honey, vanilla.

Either use two non-stick cookie sheets, or lightly oil
two non-non-stick cookie sheets.

Combine liquid ingredients into large mixing bowl,
and stir well.

Using a spoon, make evenly sized, evenly spaced cookies,
12 per sheet.  After distributing the "dough", use one
or two spoons to round and flatten each cookie to approx.
3/8 inch thickness.

Bake for 35-40 minutes to desired firmness, probably to
about when they're partly browned and will still be a
bit chewy.

Remove from oven, loosen from sheets with a spatula,
allow to cool.

Quantities:
----------

3 cup  quick oats (see Notes)
   1/2 cup  raisins and/or currants
   1/2 cup  walnuts, coarsely chopped
   1/4 tsp  ground cinnamon
   1/2 tsp  salt
     1 tsp  baking powder (optional)

1 1/2 cup  milk (of whatever kind; see Notes)
     4 Tbs  honey
   1/4 tsp  vanilla extract

Notes:
-----

Oats:  Use bulk quick oats.  These are just rolled oats
that have been chopped up, and have nothing else added.
Regular rolled oats might work, I just haven't tried it.

If using sweetened soy milk, reduce the honey by about 1/3.
Vanilla flavored soy milk is also good.

Other fruit and nut substitutions or additions would
probably be good to experiment with.

GCBrewingCo:
IME (which is considerable in the world of cookies), non-stick baking sheets overly darken the bottom.  Either use aluminum and grease or even better get the Silicone baking sheets (I use Silpat) on a heavy gauge 1/2 sheet pan...
