Mash at 152F one hour
1 oz Simcoe, AA 12, 1 oz Centennial, 11 AA, FWH
1 oz Citra, AA 11, 45 min.
1 oz Cent. 30 min.
1 oz Citra, 15 min
2 oz Cascade, 1 oz Simcoe, KO
Wyeast 1056, Ferment at 62-67F

I can't wait to get home this evening and check out the aroma in the basement, they should be cranking my then. Basement was 50 F last night when the fermentation was just starting to show. I may make a kolsch later this spring, with some of these new hops.

Brewed yesterday, 12 gallons, OG 1.070, 30 IBU
35 lb Vienna malt
mash at 151 F
Hop Schedule:
FWH, Perle, 2 oz, AA  6.3
Bittering, Opal, 1 oz, AA 6.5
Flavor, Smaragd, 1 oz, AA 4.5, 20 min
Aroma, Hallertau and Smaragd, 1 oz each at KO
Ferment at 50 to 54 with Wyeast 2206

Welp, here's what I did with the two fermenters of my "Scottish/Vienna Porter". In one secondary, I put in 3 oz of toasted cocoa nibs and allowed it to sit on those for about 3 weeks, then gyle-primed and bottled it. The other secondary was also gyle-primed, then one gallon was bottled and the other 5 was put into a corny. Both were bottled/kegged two Sundays ago. Just pulled a pint and a growler off the keg..............I like. Toasty malt, with hints of chocolate and anise. My basement is about 53 - 55 F, pulled right out of the keg it's essentially cask ale. Homebrewing might be the worst hobby ever. MA, I've got some bottles for you, we can get together after I have a chance to QC them.

I think we could arrange that. I"ve been bottling at least half of my beer the past couple of years because......I can't drink the kegs fast enough, like to brew more than I like to drink, it pays off at least 5 fold in barter, I have beer that I can age for several months, makes you a superstar when you show up places with gifts of homebrew. It's worth the time for 5 or 10 gallons of bottles.

Mash temp 152 F
1 oz Magnum, AA 13, 60 min
1 oz Perle, AA 8, 45 min
1 oz Bramling Cross, AA 7.0, 20 min
1 oz Bramling Cross, AA 7.0, 10 min
1 oz EKG, AA 5.4, 0 min
Wyeast 1728, ferment at 55 F.

I've seen Southern Tier Pumpking on draft around Durham, so that may also be available in Charlotte. Can't help you with an NC pumpkins, I generally don't drink them.

yup

Maybe it's just me, but I wouldn't want that oak/vanilla character anywhere near any saison that I ever brew. Especially one with French Saison.
