everything not-beer / goodbye NC beer fans
« on: July 03, 2008, 12:45:36 PM »

i'm just dropping a note to all my beer friends from the last 20 plus years in this community. I am leaving in a few weeks. I will be relocating in Western Massachusetts/Amherst area. I've made lots of friends in participating in World BEER Fest and especially SouthEast Micro fests. Thanks to Tyrone, the Bradfords,Keith, Leslie and all my best pals in this community. For years, NC has been in a "inferiority complex" as compared to other my beerenlightened areas. This no longer seems to be the case. Congratulations to all, I'll miss the friends and (yes) the beers Sincerely Ed Malachowski aka hop head ed

nc beer stores/bars discussion / Taking my wife out in Durham
« on: February 22, 2008, 01:54:22 PM »
Any suggestions on good beer spots without too smoky an atmosphere. The location should be generally Durham and we've already checked out Tylers, Danes, Federal and James Joyce...Ideas?

homebrewing / Weak yeast?
« on: January 30, 2008, 02:44:12 PM »
I'm trying to figure out why fermentation is slow to happen? I'm making a mostly extract with 3 lbs of malt batch. I got lots of aroma while brewing. I'm using Wyeast 1056 for this hoppy american style ale. I had some trouble chilling the wort so it might have been about 85 degrees when pitched. (I had to leave the house) I figured it would cool soon and magic would happen. So far I have a small amount of krausening (an inch) no real foaming and NO bubbling through the airlock. Now what was left of my yeast is begininng to settle. Can I repitch more yeast? Will this muck things up?Virtual beginner with just enough experience to make me cocky and foolish.. edb
